Scallops: a tasty exploration

Did you know that what most Americans think of as a “scallop” is actually just one part of a much larger animal? The delicious white disc we love to eat is the muscle that closes the shell. And did you know that scallops are the only shellfish that swim? They do that by opening and closing the shell, squirting out water in scallop jet propulsion. And how about this: ask most fishermen their favorite way to eat scallops and they’ll tell you it’s raw, still twitching. There’s so much more to learn about this delicious but little understood bivalve, and we can’t wait to share it with you!
